「燻」赤坂

経沢さんから紹介してもらった「燻」に行ってきました。

取材などは受けないという隠れ家のお店で、カウンターでお店の人といろいろ話ながら、おいしいものをいっぱい出してもらいました。

特に印象的だった3品。

■からすみ
これまで食べたからすみとは明らかに違う感じです。あまりしょっぱくなくて、たまごのつぶつぶの存在感があります。

■あらのお鍋
あらとねぎだけのシンプルな鍋。味付けしてないというのに、あらのあぶらでほのかに甘い絶品スープがやばいです。

■オムレツ風リゾット
トリュフやフォアグラが入っためちゃめちゃうまいリゾットです。オムレツ風のたまごの上にはおたふくソースが。自分のなかの日本人舌をくすぐる三位一体のうまさです。

そして、最後には葉巻です。
